Chef Justin “JC” Cartwright draws on his diverse background in the culinary arts to brand Scarlett O’Hara’s as St. Augustine’s top restaurant. A South Carolina native, Chef Cartwright was raised on homegrown southern cuisine. Being an adventurous foodie lead him to a culinary career, but experimenting with Traditional Cantonese, and Spanish food made him a well-rounded Chef.
Chef Cartwright went to work in the corporate world for the Chili’s Restaurant chain as a “Corporate Trainer”. After traveling the country opening numerous new franchises, he settled in St. Augustine.
Graduating from St. Augustine’s School of Culinary Arts, and going to work for the famous Columbia Restaurant, Chef Cartwright is embedded in St. Augustine’s thriving food culture.
Drawing on his experience with many different genres of cuisine, and his experience in corporate training, Chef Cartwright runs his kitchen with the precision and a passion for Southern Style Cuisine that drew him to the field as a child.
