Meet the Chef

Managing partner Michael Lugo studied hotel and restaurant managements at the University of North Texas, and developed an extensive management resume working for Pappas Restaurant Group, Landry’s Restaurant Group, Food Star Restaurant Group, and Chamberlain’s Steak and Chop House in Dallas. HE and his wife Stephanie moved to St. Augustine looking for a slower pace of life, yet bringing with them a passion for fine dining.

Chef David Maltby, The Tasting Room’s Chef de Cuisine, worked his way up the ranks at the Golden Eagle Inn in Beaver Creek, Colorado, a great training ground for working with a wide range od wild game and seafood. On Nantucket Island in Massachusetts, Chef Maltby mastered Latin cuisine while working at Cinco, a renowned upscale Spanish Restaurant. A true sportsman whose career choices are guided by his passion for snowboarding and surfing, Chef Maltby is happy to call St. Augustine home.
